A succulent chicken marinated in vibrant salsa verde, perfect for weeknight dinners or weekend barbecues.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup salsa verde
  • 3 tbsp lime juice
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. In a bowl, whisk together the salsa verde, lime juice, olive oil, garlic powder, salt, and pepper until well combined.
  2. Place the chicken breasts in a resealable bag and pour the marinade over them. Seal the bag and massage to coat the chicken. Refrigerate for at least 1 hour or overnight for deeper flavor.
  3. Preheat your grill to medium-high heat (400°F / 200°C).
  4. Remove the chicken from the marinade, letting excess drip off. Grill for 6-7 minutes per side or until the internal temperature reaches 165°F (75°C).
  5. Let the chicken rest for 5 minutes before slicing. Serve with extra salsa verde on top or on the side.
