Ingredients

  • 1 cup cucumbers, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, diced (mixed colors)
  • 1 cup chickpeas, canned or cooked
  • 3 tablespoons vinaigrette dressing

Instructions

  1. Gather all ingredients and clean mason jars.
  2. If making homemade dressing, whisk together olive oil, vinegar, mustard, salt, and pepper in a bowl.
  3. Begin layering by adding the dressing at the bottom of each jar.
  4. Follow with cucumbers and bell peppers.
  5. Add chickpeas next.
  6. Layer cherry tomatoes on top.
  7. Finally, top with fresh greens.
  8. Seal jars tightly and store in the fridge until ready to eat.

Notes

Mason jar salads can be stored in the fridge for up to five days. Use quart-sized mason jars for best results.
