Steak Queso Rice

A comforting dish that combines juicy steak, gooey queso cheese, and fluffy rice, perfect for weeknight dinners.

Ingredients

  • 1 lb ribeye or sirloin steak
  • 1 cup queso cheese (Velveeta preferred)
  • 2 cups cooked long-grain white rice
  • 1 cup diced bell peppers (mixed varieties)
  • 1/2 cup diced onion
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Heat a splash of oil in a skillet over medium-high heat. Sear the steak for 4-5 minutes on each side until desired doneness. Remove and let rest.
  2. In the same skillet, sauté the diced onions and bell peppers for 3-4 minutes until soft.
  3. Add chili powder, cumin, garlic powder, salt, and pepper; stir in the cooked rice until well mixed.
  4. Pour in the queso cheese and stir until melted and creamy.
  5. Slice the rested steak and mix with the cheesy rice, allowing to simmer for an extra minute. Serve hot garnished with cilantro.
