Ingredients
  

For the Meatloaf

  • 2/3 cup breadcrumbs for a lovely texture
  • 2/3 cup milk to keep the meatloaf moist
  • 1/2 tablespoon olive oil for sautéing
  • 1 small yellow onion, diced to add sweetness
  • 2 pounds ground beef the heart of the meatloaf
  • 2 large eggs binding the ingredients together
  • 2 tablespoons ketchup for a hint of tanginess
  • 2 teaspoons Worcestershire sauce enriching the flavor
  • 2 teaspoons garlic powder for a savory punch
  • 2 teaspoons salt to enhance flavors
  • 1 teaspoon freshly ground black pepper for warmth
  • 2 teaspoons dried oregano adding herbal notes
  • 1/2 cup chopped fresh parsley for freshness

For the Glaze

  • 1/2 cup ketchup sweet and savory topping
  • 3 tablespoons brown sugar balancing the tartness
  • 1 tablespoon apple cider vinegar for a tangy kick
  • 1 tablespoon mustard giving depth to the flavor

Instructions
 

Preparation

  • In a mixing bowl, combine the breadcrumbs with the milk and let it sit for 5-10 minutes to hydrate.
  • While the breadcrumbs are soaking, heat olive oil in a skillet over medium heat and sauté the diced onions for about two minutes until translucent.
  • In a large mixing bowl, combine the hydrated breadcrumbs, sautéed onions, ground beef, eggs, ketchup, Worcestershire sauce, garlic powder, salt, pepper, oregano, and parsley. Mix until just incorporated.

Glaze Preparation

  • In a small bowl, whisk together ketchup, brown sugar, apple cider vinegar, and mustard to create the glaze.

Cooking

  • Preheat the air fryer to 350°F (175°C).
  • Shape the meat mixture into two equal loaves and place them in the air fryer basket with space between them.
  • Air fry the loaves for 20 minutes, then glaze them with the mixture and return to the air fryer for an additional 15 minutes or until the internal temperature reaches 160°F (70°C).
  • Let the meatloaves rest for 10 minutes before slicing to allow juices to redistribute.

Notes

For added flavor, consider adding grated Parmesan cheese to the meat mixture or experimenting with herbs like basil or rosemary. Lining the air fryer basket with parchment paper can ease removal. For added spice, diced jalapeños can be mixed in. Ground turkey or chicken can be used as a leaner alternative to beef.
