Main Ingredients

  • 2 skinless, boneless chicken breast halves, cut into bite-size pieces The hearty protein that absorbs flavors beautifully.
  • 1 tablespoon tomato paste Enriching the sauce's color and taste.
  • 1 cup plain yogurt Giving creaminess and tanginess to the dish.
  • 3/4 cup coconut milk Adding indulgent creaminess and a tropical vibe.

Instructions
 

Preparation

  • Begin by heating 3 tablespoons of olive oil in a skillet over medium heat.
  • Add the chopped onion to the skillet and sauté until it’s lightly browned.
  • Stir in the minced garlic, curry powder, ground cinnamon, paprika, bay leaf, grated ginger, sugar, and salt. Continue stirring for about 2 minutes to release the essential oils.
  • Add the bite-sized pieces of chicken to the skillet, followed by the tomato paste, yogurt, and coconut milk.
  • Bring the mixture to a gentle boil, then reduce the heat to a simmer. Cook for 20 to 25 minutes or until the chicken is cooked through.
  • Remove the bay leaf, stir in the lemon juice and cayenne pepper, and simmer for another 5 minutes.

Serving

  • Serve the chicken curry hot alongside rice or naan.

Notes

For extra flavor, marinate the chicken in yogurt and spices for a few hours before cooking. Adjust the cayenne pepper for your desired spice level. Use fresh cilantro or parsley as a garnish.
