Ingredients
  

For the filling

  • 1/2 cup grape or cherry tomatoes, halved
  • 4 oz baby mozzarella balls (bocconcini) (about 120g)
  • 2 tablespoons basil pesto
  • 1 teaspoon minced garlic
  • 1/4 cup olive oil
  • Salt and pepper to season

For the assembly

  • 2 pieces ripe avocados, seeded and halved
  • 2 tablespoons balsamic glaze reduction
  • 2 tablespoons fresh basil, chopped
  • Fresh basil leaves, to serve (optional)

Preparation

  • Combine the halved tomatoes, bocconcini, basil pesto, minced garlic, olive oil, and a generous pinch of salt and pepper in a mixing bowl. Toss well until evenly coated.

Assembly

  • Slice avocados in half and remove the pits. Arrange them on a serving plate.
  • Spoon the Caprese filling into each avocado half, packing it in for a satisfying bite.
  • Drizzle with balsamic glaze and sprinkle with freshly chopped basil. Serve immediately.

Notes

For extra flavor, consider adding finely diced red onion or bell pepper to the filling. To prevent avocado browning, sprinkle a little lemon juice on cut surfaces. The filling can be made ahead of time; assemble just before serving.
