Ingredients
  

For the Meatballs

  • 1 lb Ground Chicken Lean and nutritious, serves as the base for meatballs.
  • 1 cup Ricotta Cheese Adds richness and moisture to the meatballs.
  • 2 cloves Garlic Minced, adds flavor to both meatballs and sauce.
  • 1 large Egg Binds the ingredients together.
  • 1/2 cup Parmesan Cheese Finely grated, enhances flavor and helps with texture.
  • 1 tsp Salt Season to taste.
  • 1 tsp Pepper Season to taste.

For the Spinach Alfredo Sauce

  • 1 cup Heavy Cream Creates a luxurious sauce.
  • 2 cups Fresh Spinach Adds color and nutrients.
  • 2 Tbsp Butter To sauté garlic for the sauce.

For Serving

  • 8 oz Pasta of Your Choice Can use penne, fettuccine, or zucchini noodles.

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking.
  • In a large bowl, combine ground chicken, ricotta cheese, minced garlic, beaten egg, parmesan cheese, salt, and pepper. Mix gently with your hands until well incorporated.
  • Roll the mixture into 1-inch meatballs and arrange them on the prepared baking sheet.

Cooking

  • Bake the meatballs for about 25 minutes, or until golden brown and reach an internal temperature of 165°F (74°C).
  • While baking, melt butter in a saucepan over medium heat and sauté minced garlic until fragrant.
  • Stir in heavy cream and allow it to thicken slightly. Then fold in fresh spinach and additional parmesan until the spinach wilts and the sauce becomes creamy.
  • Plate the meatballs over your choice of cooked pasta, drizzled with spinach Alfredo sauce. Garnish with more parmesan if desired.

Notes

Tips: Use freshly grated parmesan for the best flavor, and try adding red pepper flakes or Italian seasoning for extra taste. Leftovers can be repurposed into meatball subs.
