  • 6 ounces feta cheese Creamy and slightly tangy.
  • Chopped fresh herbs (parsley, oregano, thyme, or basil) For a refreshing finish.
  • Toasted baguette slices or crackers Perfect for savoring the delicious mix.

Preparation

  • Preheat your oven to 375 degrees F. Position the top rack about 4-6 inches from the broiler, with another rack in the middle.
  • In a small bowl, stir together the olive oil, oregano, red pepper flakes, salt, and pepper until well mixed.
  • In a medium bowl, combine the olives, sun-dried or marinated tomatoes, and thinly sliced garlic. Toss to coat.
  • Place the block of feta in the center of a small baking dish, ensuring there is enough space around it.
  • Spoon the olive and tomato mixture around the feta and pour the seasoned olive oil over everything.

Cooking

  • Bake for about 15-18 minutes until the edges of the feta turn golden brown.
  • Turn on the broiler to brown the top of the feta for 2-3 minutes, watching closely to avoid burning.
  • Sprinkle fresh herbs on top before serving.

Notes

For a creamier texture, use softer feta cheese. Experiment with different olives, and consider drizzling balsamic glaze after baking for a sweet and tangy finish. Let the dish cool slightly before serving for better dipping.
