  • 1 lb Sirloin steak Choose a well-marbled piece for extra flavor.
  • 1 cup Cherry tomatoes Sweet bursts of flavor.

  • 2 heads Endive lettuce Crisp and mildly bitter to balance flavors.
  • 6 cups Mixed spring greens Fresh and vibrant.

For the vinaigrette

  • 5 tbsp Balsamic vinegar Essential for the dressing.
  • 1 tbsp Dijon mustard Adds a tangy depth.
  • 1 tbsp Worcestershire sauce For umami richness.
  • 1 clove Garlic A touch of pungency.
  • 1/4 tsp Garlic powder For added depth.
  • 1 tbsp Lemon zest To brighten the salad.
  • 1/3 cup Extra-virgin olive oil For a smooth vinaigrette.
  • 1/2 tsp Coarse salt Enhances flavors.

Instructions
 

Preparation

  • Preheat the grill to medium-high heat.
  • Season the sirloin steak generously with coarse salt and ground black pepper.
  • Grill the steak for 4-5 minutes per side for medium-rare. Let it rest before slicing.
  • Grill the corn for about 10 minutes, turning occasionally until tender and lightly charred. Cool and remove kernels from the cob.

Making the vinaigrette

  • Whisk together balsamic vinegar, Dijon mustard, Worcestershire sauce, garlic powder, lemon zest, and extra virgin olive oil. Season with salt and black pepper to taste.

Assembly

  • In a large serving bowl, toss mixed greens, halved cherry tomatoes, sliced red onion, and grilled corn with the vinaigrette.
  • Slice the rested steak and add it to the salad along with crumbled gorgonzola cheese.
  • Garnish with chopped basil and parsley, and more lemon zest if desired.

Serving

  • Serve immediately for the best flavor.
