Preparation

  • In a large bowl, mash the ripe banana with a fork until smooth.
  • Add flour, sugar, baking powder, and salt to the mashed banana and stir until combined.
  • In a separate bowl, whisk together milk, egg, melted butter, and vanilla extract until smooth.
  • Pour the wet mixture into the dry ingredients and stir until just combined. Lumps are okay.
  • Heat a skillet over medium heat and lightly grease it.
  • Pour about 1/4 cup of batter onto the skillet for each pancake.
  • When small bubbles form on the surface, flip and cook for an additional 1-2 minutes until golden.

Serving

  • Serve warm with toppings like maple syrup, fresh fruits, or nuts.

Notes

Pancakes can easily be made ahead of time and stored in the refrigerator for up to 24 hours. Use very ripe bananas for optimal sweetness.
