For the Beef Mixture

  • 1 pound ground beef Rich and savory, serves as the base for the casserole.
  • 1 small onion, diced Adds sweetness and texture.

  • 2 teaspoons chili powder Provides warmth and depth.
  • 1 teaspoon ground cumin Adds warmth and an earthy flavor.

  • 1/2 teaspoon black pepper Offers a subtle kick.
  • 2 cups red enchilada sauce Zesty and tangy, coats the beef.

For the Casserole Layers

  • 8 pieces corn tortillas Soft and pliable, for layering.
  • 1 can (15 oz) black beans, drained and rinsed Adds texture and heartiness.
  • 1 1/2 cups shredded cheddar cheese Sharp and creamy, melts into a topping.
  • 1 1/2 cups shredded Monterey Jack cheese Smooth and mild, complements cheddar.
  • 1/4 cup chopped fresh cilantro (optional) Provides a fresh finishing touch.

Instructions
 

Preparation

  • Heat a skillet over medium heat. Add the ground beef and break it apart with a spatula. Sauté until browned and fully cooked, then drain any excess fat.
  • Add the diced onion and minced garlic to the skillet, sautéing for about 3-4 minutes until the onion is soft and translucent.
  • Stir in the chili powder, ground cumin, salt, and black pepper, and pour in 1 cup of enchilada sauce. Let it simmer for about 5 minutes.
  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Assembly

  • Spread a thin layer of enchilada sauce at the bottom of the baking dish. Layer corn tortillas, half of the beef mixture, a third of the black beans, and a generous amount of both cheeses. Repeat layers, finishing with a final layer of tortillas on top.
  • Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.

Baking

  • Cover the dish with aluminum foil and bake for 20 minutes. Uncover and bake for an additional 10-15 minutes, until the cheese is bubbly and golden brown.
  • Allow the casserole to rest for about 10 minutes before slicing. Garnish with fresh cilantro if desired.

Notes

Use lean ground beef for a lighter dish. Customize layers with vegetables or spices to taste. This casserole can be assembled ahead of time and refrigerated.
