  • 1/2 lb thinly sliced roast beef Tender and flavorful

Preparation

  • Heat a skillet or griddle over medium heat.
  • Spread softened butter on one side of each slice of bread.
  • On the unbuttered side of one slice, add a generous spread of mayonnaise.
  • On the unbuttered side of the other slice, add Dijon mustard if desired.

Cooking

  • Place one slice of bread, buttered side down, onto the heated skillet.
  • Layer a slice of cheddar cheese on top, followed by a portion of thinly sliced roast beef.
  • Top with another slice of cheddar cheese.
  • Place the second slice of bread on top, with the mayonnaise and mustard sides facing inward.
  • Cook the sandwich for about 3-4 minutes per side until golden and the cheese is melted.
  • Press down gently with a spatula for even grilling.
  • If using, add sliced onions during the grilling process.
  • Remove the sandwich from the skillet, allow it to rest for a minute, and then cut in half.

Notes

Choose high-quality ingredients for better flavor. Experiment with cheese and try using a panini press for an even toasting.
