Instructions
 

Preparation

  • In a large skillet over medium heat, cook the ground beef, chopped onion, and minced garlic until the beef is browned and the onions are tender. Drain off any excess fat.
  • Stir in the diced tomatoes, tomato sauce, Italian seasoning, and a pinch of salt and pepper. Let the mixture simmer for about 10 minutes.
  • While the meat mixture simmers, combine the sour cream and softened cream cheese in a medium bowl. Mix until smooth.
  • Carefully fold the cooked egg noodles into the sour cream mixture until well-coated.
  • In a greased baking dish, layer half of the noodle mixture, followed by the ground beef mixture. Spread the remaining noodle mixture on top.
  • Finish with a sprinkle of shredded cheddar cheese and chopped green onions.

Cooking

  • Bake in a preheated oven at 350°F (175°C) for 25-30 minutes, or until the top is bubbly and golden brown.

Notes

For added flavor, consider adding some red pepper flakes to the meat mixture. Substitute other types of cheese, such as mozzarella or Monterey Jack, for variety. Let the casserole cool for a few minutes before serving. Great for meal prepping!
