Preparation

  • Preheat your oven to 350°F (175°C) and prepare your muffin tin by lining it with paper liners or greasing the muffin cups.
  • In a large bowl, whisk together the flour, baking powder, baking soda, salt, and granulated sugar until well combined.
  • In another bowl, whisk the egg, milk, melted butter, and vanilla extract until smooth.
  • Pour the wet mixture into the dry ingredients, stirring gently until just combined. Avoid overmixing.
  • Gently fold in the mixed berries, taking care not to break them apart too much.
  • Prepare the creamy center by mixing the softened cream cheese, powdered sugar, and 1/2 teaspoon of vanilla extract until smooth.

Baking

  • Spoon a small amount of muffin batter into each cup, then add a dollop of the cream cheese mixture in the center.
  • Top with more muffin batter until the cups are about three-quarters full.
  • Use a toothpick or skewer to create a marbled effect by swirling the cream cheese filling into the batter.
  • Bake in your preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow them to cool for a few minutes in the pan before transferring the muffins to a wire rack to cool completely.

Notes

Consider using fresh berries when they are in season for maximum flavor. If using frozen berries, do not thaw them before mixing into the batter. For a richer filling, add a touch of lemon zest. You can also fold in chocolate chips or chopped nuts for a delightful twist.
