  • Press this mixture evenly into the bottom of the pan. Bake for 8-10 minutes and then set aside to cool.

Preparation of the Cheesecake Filling

  • In a large bowl, combine the softened cream cheese and granulated sugar. Beat together until smooth and creamy, about 2-3 minutes.
  • Gradually add the eggs, mixing well after each addition to ensure a smooth mixture.
  • Stir in the vanilla extract, sour cream, and flour until fully incorporated.
  • Fold in the pureed strawberries and heavy cream until blended.
  • Pour the cheesecake filling into the cooled crust, smoothing the top with a spatula.
  • Bake for 45-50 minutes, or until the edges are set but the center jiggles slightly.
  • Turn off the oven, crack the door, and let the cheesecake cool for 1 hour.

  • In a small bowl, mix the crushed freeze-dried strawberries, granola, melted butter, and sugar until combined.
