  • 1 large head Romaine lettuce, chopped Washed and dried
  • 1 cup croutons (store-bought or homemade) For added crunch
  • ½ cup freshly grated Parmesan cheese Can substitute with vegan Parmesan
  • cup extra virgin olive oil For the dressing
  • 2 cloves garlic, minced Adds flavor to the dressing
  • 2 tbsp freshly squeezed lemon juice For acidity in the dressing
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • to taste Salt and pepper For seasoning

Preparation

  • Wash and dry the romaine lettuce, then chop into bite-sized pieces.
  • In a bowl, whisk together minced garlic, lemon juice, Dijon mustard, Worcestershire sauce, salt, pepper, and olive oil until smooth.
  • Fold in freshly grated Parmesan cheese into the dressing.
  • In a large bowl, combine chopped romaine with croutons and pour the dressing over.
  • Gently toss until evenly coated and garnish with extra grated Parmesan cheese before serving.

Notes

Store leftover components separately to maintain freshness. The dressing can be kept in a sealed jar in the refrigerator for up to a week.
