Instructions
 

Preparation

  • Preheat the oven to 325°F (165°C).
  • In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until fully combined.
  • Press the mixture into the bottom of a 9-inch springform pan.
  • Bake the crust for 10 minutes and let it cool completely.
  • In a large bowl, beat together the cream cheese, sour cream, granulated sugar, vanilla extract, and lemon juice until smooth.
  • Add the eggs one at a time, mixing thoroughly after each addition.

Baking

  • Pour the cheesecake mixture over the cooled crust and tap the pan gently to release air bubbles.
  • Bake for 50-60 minutes, or until the center is set but slightly jiggly.
  • Let the cheesecake cool at room temperature for an hour before refrigerating for at least 4 hours or overnight.

Topping

  • In a small saucepan, combine cherries and kirsch, cooking for 5-7 minutes.
  • In a separate bowl, whip heavy cream and powdered sugar until stiff peaks form.
  • Spread the whipped cream over the cheesecake and drizzle with the cherry mixture.
  • Sprinkle with dark chocolate shavings before serving.

Notes

For additional flavor, consider adding a pinch of salt to the crust. Make sure your cream cheese is softened to prevent lumps.
