  • 4 large eggs fresh and free-range for the best flavor
  • 1/2 cup granulated sugar to provide sweetness and structure

  • 1 tsp baking powder to help the cake rise
  • 1/4 tsp salt to balance the sweetness

For the Filling

  • 1 cup heavy cream adds creaminess
  • 2 tbsp powdered sugar to sweeten the whipped cream
  • 1 tsp vanilla extract for aromatic essence
  • 1 cup cherry pie filling a burst of flavor that embodies the Black Forest
  • chocolate shavings (for garnish) to elevate the presentation

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease the edges.
  • In a large mixing bowl, whisk the eggs and granulated sugar together until light and fluffy, about 3-4 minutes.
  • Sift together the all-purpose flour, cocoa powder, baking powder, and salt. Gradually fold these dry ingredients into the egg mixture.
  • Pour the batter evenly into the prepared pan, gently spreading it out.
  • Bake for 10-12 minutes, or until a toothpick inserted comes out clean.
  • Dust a clean kitchen towel with powdered sugar. Once the cake is done, turn it out onto the towel and carefully peel off the parchment paper.
  • Roll the cake up with the towel while still warm, starting from the short end. Let it cool completely.

Filling and Assembly

  • Whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  • Once the cake has cooled, unroll it carefully and spread a layer of whipped cream over the cake.
  • Add the cherry pie filling, then roll the cake back up tightly. Dust with powdered sugar and garnish with chocolate shavings.

Notes

Ensure your eggs and sugar are well-whisked for fluffiness. You can experiment with different fillings or add chopped nuts for extra texture. Store in the refrigerator for up to three days, or freeze unfilled for up to three months.
