  • 1 cup boiling water
  • 0.5 cups black food coloring gel

For the Frosting

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 0.5 cups unsweetened cocoa powder
  • 0.25 cups heavy cream
  • 2 teaspoons vanilla extract

For Assembly and Garnish

  • 0.5 cups blackberry preserves
  • Fresh blackberries for garnish
  • Dark chocolate shavings for garnish

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare three 8-inch round cake pans by greasing and flouring them.
  • In a large mixing bowl, sift together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
  • In another bowl, combine buttermilk, vegetable oil, eggs, and vanilla extract.
  • Add the wet mixture to the dry ingredients and mix until combined.
  • Gradually stir in the boiling water and black food coloring gel until the batter is smooth.

Baking

  • Divide the batter evenly between the prepared cake pans and bake for 30-35 minutes.
  • Check for doneness with a toothpick; it should come out clean.
  • Let the cakes cool in the pans for about 10 minutes before removing to cool completely on wire racks.

Frosting

  • Beat the softened butter until creamy, then gradually add powdered sugar and cocoa powder until smooth.
  • Blend in the heavy cream and vanilla extract until fluffy.

Assembly

  • Spread blackberry preserves between each cake layer.
  • Frost the top and sides of the cake with chocolate frosting.
  • Garnish with fresh blackberries, chocolate shavings, and mint leaves.

Notes

For fluffy results, ensure butter and eggs are at room temperature. Consider adding a pinch of espresso powder for a richer flavor. Use an offset spatula for frosting application and experiment with flavored extracts.
