Crumb topping

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan with butter or cooking spray.
  • In a medium bowl, whisk together the 2 1/4 cups of flour, 2 tsp of baking powder, and 1/2 tsp of salt until combined. Set this mixture aside.
  • In a large mixing bowl, beat 1 cup of softened butter with 1 cup of sugar until the mixture becomes light and fluffy.
  • Add the 4 eggs, one at a time, mixing well after each addition. Incorporate 1 tsp of vanilla extract.
  • Gradually alternate adding the flour mixture and 1/2 cup of milk to the butter-sugar-egg mixture. Mix just until combined.
  • Gently fold in the 1 1/2 cups of fresh blueberries.

Baking

  • Pour the prepared batter into your greased cake pan.
  • For the crumb topping, mix together 1/2 cup flour, 1/4 cup sugar, 1/2 cup of melted butter, and 1 tsp of cinnamon.
  • Sprinkle the crumb mixture over the batter.
  • Bake for 35 to 40 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

Notes

Ensure your butter is at room temperature for best results. Consider mixing in lemon zest or almond extract for added depth. A glaze of powdered sugar and lemon juice can enhance the sweetness.
