Preparation

  • Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and set it aside.
  • In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted unsalted butter. Stir until it resembles wet sand. Press evenly into the bottom of the springform pan.
  • Bake for 8-10 minutes until golden and set. Allow the crust to cool.

Filling

  • In a large bowl, beat together cream cheese and granulated sugar until smooth and creamy.
  • Add vanilla extract and eggs, one at a time, mixing gently. Stir in sour cream and heavy cream until smooth.

Blueberry Swirl

  • In a saucepan over medium heat, combine fresh blueberries, granulated sugar, and lemon juice. Cook for 5-7 minutes, gently stirring until the blueberries burst into a sauce.

Assembly and Baking

  • Pour cheesecake batter into the cooled crust. Spoon dollops of blueberry sauce across the top and gently swirl with a knife.
  • Bake for 50-60 minutes, until edges are set but center is slightly jiggly.
  • Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  • Refrigerate for at least 4 hours, or overnight. Remove from springform pan to serve.

Ensure room temperature ingredients for a smooth batter. Avoid overbaking to prevent dryness, and consider a water bath for even baking.
