  • 2 pieces ripe peaches, sliced into wedges Must be ripe for best flavor
  • 1/4 cup bourbon Can substitute with apple juice if necessary
  • 2 tablespoons honey Use a low-calorie sweetener as an alternative if desired
  • 2 tablespoons olive oil Good-quality extra virgin olive oil recommended
  • 2 tablespoons freshly squeezed lemon juice Freshly squeezed enhances flavor

Preparation

  • Preheat your oven to 400°F (200°C) and grease a baking dish with nonstick spray.
  • Slice the ripe peaches into half-inch wedges.
  • In a bowl, whisk together the bourbon, honey, olive oil, lemon juice, salt, and pepper until fully combined.
  • Place the salmon fillets in the greased baking dish, surrounded by the sliced peaches. Drizzle the bourbon sauce generously over everything.

Cooking

  • Roast in the oven for 20-25 minutes until the salmon is flaky and the peaches are caramelized.
  • Serve warm, drizzled with pan juices, and garnished with fresh herbs if desired.

Notes

Be careful not to overbake the salmon as it can dry out. Store leftovers in an airtight container in the refrigerator for up to two days.
