  • 450 grams cauliflower, tender and creamy
  • 1 onion, sweet and chopped
  • 1 carrot, bright and chopped
  • 1 bell pepper, colorful and chopped
  • 1 clove garlic, minced for flavor
  • 200 grams red cherry tomatoes, halved for a pop of color

Base and Seasoning

  • 5 cups whole milk, rich and creamy Can substitute with almond or oat milk for a lighter version.
  • 2 tablespoons olive oil, for sautéing goodness Can use coconut oil for a vegan option.
  • Salt to taste Enhances the flavors.
  • Fresh parsley to taste For garnish and freshness.

Preparation

  • Chop the broccoli and cauliflower into small florets.
  • In a large pot, bring the whole milk to a gentle simmer over medium heat and add a pinch of salt.

Cooking

  • Add the broccoli and cauliflower florets to the simmering milk. Cook until tender, about 15-20 minutes.
  • In a skillet, heat olive oil over medium heat. Sauté onion, carrot, bell pepper, and minced garlic until soft.
  • Once the vegetables are tender, use an immersion blender to puree the mixture until smooth.
  • Stir the sautéed vegetables into the creamy mixture and combine well.
  • Season with additional salt to taste. Garnish with chopped parsley and halved cherry tomatoes.
  • Serve hot with crusty bread or alongside your favorite protein dish.

Notes

For enhanced flavor, add a sprinkle of grated cheese before serving. For a kick, consider adding red pepper flakes during sautéing.
