Instructions

  • Preheat your oven to 375°F (190°C), allowing it to reach the optimal baking temperature.
  • Prepare the vegetables: Chop the broccoli and diced potatoes into bite-sized pieces. Slice the onion, carrot, and mushrooms to ensure even cooking.
  • In a large baking dish, toss the broccoli, potatoes, onion, carrot, and mushrooms with a generous drizzle of olive oil, followed by a sprinkle of salt, black pepper, and dried garlic. Ensure all the vegetables are evenly coated.
  • Arrange the vegetable mixture in an even layer for optimal roasting.

Baking

  • Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the vegetables are tender and slightly browned.
  • In a mixing bowl, whisk together the eggs, Greek yogurt (or sour cream), milk, and a pinch of salt and pepper until well combined.
  • Once the vegetables are done baking, pour the egg mixture over the roasted vegetables, ensuring even distribution.
