Preparation

  • Shred the chicken using two forks once cooled.
  • In a bowl, mix shredded chicken, buffalo sauce, cream cheese, shredded cheddar cheese, and green onions until well combined.

Assembly

  • Place an egg roll wrapper on a clean surface; spoon about two tablespoons of filling into the center and fold according to package instructions.

Cooking

  • Heat oil in a deep pan over medium heat.
  • Fry the egg rolls for 3-4 minutes per side until golden brown.

Notes

To make a lighter version, you can use lean ground turkey instead of chicken, low-fat cream cheese, and whole wheat egg roll wrappers. These egg rolls can be frozen before frying for a quick snack later.
