  • 1 ripe avocado creamy and buttery, an excellent source of nutrients
  • 1/2 cup Greek yogurt or sour cream providing a tangy balance to the dish
  • 1 lime lime (for juice and zest) adding a zing of freshness
  • Salt and pepper to taste enhancing all the flavors

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Rub each salmon fillet with olive oil and sprinkle the Cajun seasoning generously over the top.
  • Place the seasoned fillets on a baking sheet lined with parchment paper.

Cooking

  • Bake for 12-15 minutes until the salmon flakes easily with a fork.
  • While the salmon is baking, prepare the avocado lime cream by blending the ripe avocado, Greek yogurt, lime juice, lime zest, salt, and pepper until smooth.
  • Once the salmon is ready, top each fillet with the creamy avocado mixture and sprinkle with fresh cilantro if desired.

Notes

For extra heat, add additional Cajun seasoning or cayenne pepper to the avocado cream. Avoid overcooking the salmon to maintain moisture. Leftovers can be stored in airtight containers in the refrigerator for 2-3 days.
