Preparation

  • Sauté onions and bell peppers in olive oil over medium heat until softened and fragrant.

  • Stir in diced chicken and chicken broth; bring to a simmer for about 5 minutes.
  • Mix in white beans and cream cheese, stirring until smooth.
  • Reduce heat and simmer uncovered for about 20 minutes until thickened.
  • Finish with lime juice and garnish with green onions before serving.

Notes

This chili is delicious on its own or served with sour cream and cilantro, cornbread, or a fresh salad. Store leftovers in an airtight container for 4-5 days, or freeze for up to 3 months.
