Avocado Base

  • 2 pieces ripe avocados, halved and pitted Choose avocados that are perfectly ripe.

Stuffing

  • 1 cup cherry tomatoes, halved Use sweet, ripe tomatoes.
  • 1/2 cup fresh mozzarella balls, halved or torn Substitute with feta cheese for a tangier flavor.
  • 1/4 cup fresh basil leaves, chopped Fresh basil enhances the flavor.
  • 2 tablespoons balsamic glaze A drizzle of balsamic vinegar can be used as a substitute.
  • to taste Salt and pepper Season to your liking.

Preparation

  • Carefully slice the avocados in half and gently remove the pit.
  • Scoop out a small amount of the avocado flesh to create enough room for the stuffing. Set the removed flesh aside.
  • In a mixing bowl, combine the halved cherry tomatoes, fresh mozzarella balls, and chopped basil.
  • Season the mixture with salt and pepper to enhance the flavors, and toss until well combined.
  • Spoon the Caprese mixture generously into the hollowed-out avocado halves.
  • Drizzle with balsamic glaze.

Serving

  • Serve immediately and enjoy your creation!

Notes

For extra crunch, add toasted pine nuts or walnuts. Store leftovers in an airtight container in the refrigerator for 1-2 days.
