Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C).
  • Mix together the graham cracker crumbs, sugar, and melted butter in a bowl.
  • Press the mixture into the bottom of a 9-inch springform pan.
  • Bake for 8-10 minutes until lightly golden and let cool.

Making the Filling

  • In a large mixing bowl, beat the softened cream cheese until smooth.
  • Gradually add the cup of sugar and vanilla extract, mixing until fully combined.
  • Add the eggs one at a time, mixing well after each addition.
  • Mix in the sour cream until creamy, then gently fold in the mini chocolate chips and caramel sauce.

Baking

  • Pour the filling over the cooled graham cracker crust, smoothing the top.
  • Bake for 55-65 minutes. The center may be jiggly when done; it will firm as it cools.
  • Turn off the oven and let the cheesecake cool inside with the door slightly ajar for about an hour.
  • Transfer the cheesecake to the refrigerator for at least 4 hours or overnight.

Serving
