Ingredients
  

For the cookie base

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed tightly for lush sweetness
  • 1/2 cup granulated sugar for added sweetness
  • 2 large eggs providing richness
  • 1 tsp vanilla extract for warm flavor
  • 2 cups all-purpose flour for the perfect cookie base
  • 1 tsp baking soda ensuring a lovely rise
  • 1 tsp cinnamon for delightful aromas

For the cheesecake filling

  • 8 oz cream cheese, softened for the cheesecake filling
  • 1/4 cup granulated sugar for the cream cheese mixture
  • 1/2 tsp vanilla extract for cheesecake delight

Instructions
 

Prepare the cheesecake filling

  • In a small bowl, beat the cream cheese, sugar, and vanilla together until smooth and creamy.
  • Scoop the mixture into tiny 1 tsp-sized balls and place them in the freezer for 30 minutes.

Make the cookie dough

  • In a larger bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the eggs and vanilla extract, mixing until well combined and smooth.

Mix dry ingredients

  • In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.

Add the mix-ins

  • Stir in the grated carrots, oats, walnuts, and raisins until evenly distributed throughout the dough.

Assemble the cookies

  • Take 2 tbsp of dough and flatten it slightly in your palm.
  • Place a frozen cheesecake ball in the center and carefully wrap the dough around it, sealing the edges completely.
  • Repeat this process until all dough and cheesecake filling are used.

Bake the cookies

  • Preheat your oven to 350°F (175°C).
  • Place cookie balls on a lined baking sheet, leaving about 2 inches between each cookie.
  • Bake for 13 to 15 minutes, or until the edges are golden and the centers are set.

Cool and serve

  • Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack.

Notes

For a deeper flavor, consider toasting the walnuts. You can also substitute granulated sugar for coconut sugar.
