Instructions
 

Preparation

  • Preheat the oven to 300°F (150°C) and line two baking sheets with parchment paper or silicone baking mats.
  • Sift almond flour and powdered sugar together in a mixing bowl to eliminate lumps.
  • In a separate clean bowl, beat egg whites until soft peaks form, then gradually add granulated sugar and continue to beat until stiff peaks are achieved.
  • Gently fold the sifted dry ingredients into the beaten egg whites with a spatula.
  • Divide the batter into two portions and add food coloring to each according to your desired design.
  • Pipe small circles onto the prepared baking sheets, leaving space between each.
  • Allow the piped macarons to rest at room temperature for 30-60 minutes to form a skin on their surface.

Baking

  • Bake the macarons for 15-18 minutes or until they have risen and have a slight sheen.
  • Once cooled, prepare the filling by beating cream cheese and softened butter until smooth.
  • Gradually mix in powdered sugar, vanilla extract, cinnamon, and grated carrot until well combined.

Assembly

  • Pair the macaron shells by size, fill one shell with the carrot cake filling, and sandwich it with the matching top.
  • For best flavor, refrigerate the filled macarons for at least 24 hours before serving.

Notes

Ensure egg whites are at room temperature for better aeration. Using a kitchen scale for accuracy improves macarons' quality. Experiment with flavoring the filling by adding orange zest or nutmeg for creative variations.
