Main Ingredients

  • 1 lb lean ground beef The star of our dish, providing savory flavor and hearty texture.
  • 1 cup elbow macaroni These tiny pasta shapes absorb all the deliciousness.
  • 2 cups low-sodium beef broth Adds depth and richness, forming the flavorful base.
  • 1 medium onion, diced Provides sweet and savory flavor.
  • 1 cup bell peppers, chopped (mix of red and green) Enhanced color and crunch.
  • 2 cloves garlic, minced Brings all the ingredients together.
  • 2 cups shredded sharp cheddar cheese Creates a gooey, stretchy factor.

Instructions

Cooking

  • In a large skillet over medium heat, brown the ground beef until fully cooked, usually takes about 5–7 minutes. Drain any excess fat.
  • Add the diced onion and chopped bell peppers to the skillet. Sauté for about 5 minutes until softened. Stir in the minced garlic for the last minute.
  • Stir in the elbow macaroni and pour in the beef broth. Bring to a boil while stirring occasionally.
  • Once boiling, reduce heat and let it simmer uncovered for about 10 minutes, stirring occasionally.
  • Remove from heat and mix in the shredded cheddar cheese until melted.
  • Serve hot and garnish with additional cheese or sliced green onions, if desired.

Notes

Consider swapping ground beef for turkey or chicken, and using whole wheat pasta as healthier alternatives. This dish can be served alongside a light salad or garlic bread to elevate the meal.
