Ingredients
  

For the Filling

  • 1 pound ground beef rich and flavorful
  • 1 medium onion, diced for sweetness
  • 2 cloves garlic, minced adding a punch of flavor
  • 1 can (15 oz) black beans, drained and rinsed for a healthy boost
  • 1 can (10 oz) diced tomatoes with green chilies providing texture and zest
  • 1 tablespoon taco seasoning for that classic southwest flavor

For the Dish

  • 1 package (9 oz) cheese tortellini a delightful twist
  • 2 cups shredded cheddar cheese for gooeyness
  • 1 cup enchilada sauce rich and vibrant
  • ½ cup sour cream for creaminess
  • as needed olive oil for cooking

Instructions
 

Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Sauté the diced onion for 3-4 minutes until translucent.
  • Add minced garlic and sauté for an additional minute.
  • Cook ground beef until browned, about 5-7 minutes. Drain excess fat if necessary.
  • Stir in the black beans, diced tomatoes, and taco seasoning; let simmer for about 5 minutes.

Cooking the Tortellini

  • In a separate pot, cook the cheese tortellini in salted boiling water according to package instructions, then drain.

Baking

  • Preheat your oven to 350°F (175°C).
  • Mix the cooked tortellini with the beef mixture in the skillet.
  • Spread enchilada sauce in a baking dish, layer the tortellini mixture on top, drizzle with remaining sauce, and sprinkle with cheddar cheese.
  • Cover the dish with foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 10-15 minutes, until cheese is melted and bubbling.

Notes

For extra flavor, add jalapeños or bell peppers. Use ground turkey or chicken as a leaner alternative. Fresh cilantro or parsley on top adds color and flavor.
