  • 1 1/2 cups shredded cheddar cheese rich, creamy, and melts beautifully

  • 1 medium tomato, diced adds a burst of juiciness and freshness
  • 1/2 cup sour cream creamy, cooling, and a must for dipping
  • 1/4 cup salsa adds a zesty kick and vibrant flavor

Instructions
 

Preparation

  • In a skillet, heat olive oil over medium heat. Once hot, add the ground beef and cook, breaking it apart with a spatula until it’s browned and fully cooked, approximately 5-7 minutes.
  • Stir in the taco seasoning and water. Allow the mixture to simmer for about 3-5 minutes, letting it thicken slightly. Don’t forget to season with salt and pepper to taste!
  • While the beef is simmering, warm the tortillas in a separate pan or microwave for 15-20 seconds until they are soft and pliable.
  • Once the beef is ready, take spoonfuls of the mixture and place them evenly onto the center of each warmed tortilla.
  • Sprinkle a generous amount of shredded cheddar cheese on top of the beef.
  • Fold the tortillas into pockets by folding in the sides and then rolling them up tightly from the bottom.
  • Heat a clean skillet over medium heat and lightly grease it with oil. Place the tortilla pockets seam side down in the skillet and cook for 2-3 minutes on each side until they are golden and crispy.
  • Once cooked, remove them from the skillet and allow them to cool for a minute before cutting in half.
  • Serve immediately with a side of salsa and sour cream for dipping.

Notes

Consider adding toppings like diced onions or avocado slices for extra crunch. For a breakfast variation, substitute ground beef with scrambled eggs.
