For the Filling

  • 2 cups cooked chicken, shredded Use leftover chicken or pre-cooked for convenience.
  • 2 cups broccoli florets, steamed until just tender Fresh or frozen broccoli can be used.
  • 1/2 cup sour cream Can Substitute with Greek yogurt for a healthier option.
  • 1/2 cup milk Use a lower-fat version if preferred.
  • 1 cup cheddar cheese, shredded Use any cheese of your choice for variation.
  • 1/4 cup green onions, chopped For added flavor and garnish.
  • to taste Extra cheese and green onions for garnish Adds a nice touch before serving.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Rub the washed and dried potatoes with olive oil, then sprinkle with salt and pepper. Place the potatoes on a baking sheet and bake for about 1 hour or until tender.
  • Once baked, let the potatoes cool slightly. Cut a slit on the top of each potato and scoop out the insides, leaving a thin layer.

Mixing the Filling

  • In a large bowl, combine the scooped potato, shredded chicken, steamed broccoli, sour cream, milk, shredded cheddar cheese, and chopped green onions. Season with salt and pepper.

Baking

  • Generously spoon the filling mixture back into the potato skins. Top with additional cheese.
  • Return the stuffed potatoes to the oven and bake for an additional 20 minutes, or until the cheese is melted and bubbly.

Serving

  • Before serving, sprinkle with more green onions for a fresh touch.

Notes

Consider adding carrots or bell peppers for more veggies. For a spicy kick, add red pepper flakes. Mix different cheeses for a complex flavor. For crispy skins, return emptied potato skins to the oven briefly before stuffing them.
