Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large skillet over medium-high heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is translucent. Drain excess grease.
  • In the same skillet, melt the butter over medium heat. Sprinkle in the flour and cook for about 2 minutes, stirring constantly, until it becomes fragrant and slightly golden.
  • Gradually whisk in the beef broth and milk, bringing the mixture to a simmer. Cook until thickened, about 4-5 minutes.

Mixing Ingredients

  • Add onion powder, paprika, Worcestershire sauce, black pepper, and mustard powder. Stir well.
  • Mix in the thawed corn and uncooked rice. Transfer everything into a lightly greased 9x13-inch baking dish.

Baking

  • Cover with foil and bake for 45 minutes, or until the rice is tender and the mixture is bubbly.
  • Remove from the oven, uncover, and stir in 1 cup of shredded cheddar cheese until melted.
  • Sprinkle the remaining cheese over the top and return to the oven, uncovered, for 10 minutes until melted and golden.

Serving

  • Garnish with fresh parsley before serving.

Notes

This casserole is ideal for batch cooking! Leftovers can be stored in the fridge for up to 3-4 days. To reheat, thaw overnight and warm in the oven until heated through.
