  • 1 cup shredded cheddar cheese The star of the show, melts beautifully.
  • 1/4 cup grated parmesan cheese Adds depth and richness.
  • 1/4 cup sour cream or cream cheese (optional) Adds creaminess.
  • 1/4 cup chopped green onions or chives For color and flavor.
  • 1 each egg Helps maintain structure.
  • to taste salt & pepper Essential for flavor.
  • 1/4 cup breadcrumbs (for coating) For crispy exterior.
  • 2 tbsp butter, melted For added flavor and golden finish.

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the prepared mashed potatoes, shredded cheddar cheese, grated parmesan cheese, and sour cream (or cream cheese). Add the chopped green onions or chives.
  • Crack the egg into the mixture and season with salt and pepper. Stir until well combined.
  • Shape the mixture into small balls or puffs, about 1-2 tablespoons each.
  • Place the puffs on the prepared baking sheet, ensuring they have space. Roll each puff in breadcrumbs.
  • Drizzle the melted butter over the tops of the puffs.

Baking

  • Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy on the outside.
  • Serve warm and enjoy!

Notes

For extra flavor, add smoked paprika or garlic powder. To make these gluten-free, use gluten-free breadcrumbs.
