Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) to ensure even cooking.
  • Slice off the root and stem ends of the Vidalia onions. Cut them in half vertically and peel away the skin.
  • Chop the onions into slivers about 1/4-inch to 1/2-inch thick.
  • Place the chopped onions in a saucepan and cover them with water. Bring to a boil and let simmer for 8 minutes, then drain.
  • Toss the warm onions with 2 tablespoons of unsalted butter.
  • In a large bowl, beat the eggs with the evaporated milk until well combined.
  • Add the cooked onions, crumbled Ritz crackers, shredded cheddar cheese, salt, and pepper.
  • Mix all the ingredients well until evenly combined.
  • Transfer the mixture to a 9x13-inch baking dish that has been coated with non-stick spray.

Topping Preparation and Baking

  • In a small bowl, combine the additional cup of crumbled Ritz crackers with the melted butter. Sprinkle this mixture evenly over the casserole.
  • Bake in the preheated oven for about 45 minutes, or until the middle is set and the top is golden brown.
  • Once baked, remove from oven and let cool slightly before serving.

Notes

Choose fresh Vidalia onions for the best sweetness. For a twist, add cayenne pepper for spice or cream cheese for added creaminess. Other cheese options include Monterey Jack or Gouda for a different flavor profile. Ensure even cooking by not overcrowding the baking dish.
