Preparation

  • In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth and creamy.
  • In a separate bowl, whip the heavy whipping cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until fully combined.
  • Incorporate the sour cream, folding it in gently until smooth.
  • Gradually add the crushed graham crackers and fold until evenly distributed.

Cherry Topping

  • For fresh cherries, combine chopped cherries, granulated sugar, and lemon juice in a small bowl. Mix thoroughly. For cherry pie filling, stir to loosen it up.

Assembly

  • Spoon the cheesecake fluff into serving bowls and top with the cherry mixture.
  • Chill in the fridge for at least 1 hour before serving.
