For the Cherry Filling

For the Whipped Cream Topping

Instructions
 

Prepare the Chocolate Cake

  • Preheat your oven to 350°F (175°C) and meticulously grease and flour two 9-inch round cake pans.
  • In a large bowl, whisk together the flour, baking powder, baking soda, salt, cocoa powder, and sugar.
  • Add in the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients, mixing until smooth.
  • Gradually pour in the boiling water while stirring constantly to achieve a thin batter.
  • Pour the batter evenly into the prepared cake pans and bake for 30-35 minutes or until a toothpick comes out clean.
  • Allow the cakes to cool completely before assembling.

Prepare the Cherry Filling

  • In a medium saucepan, combine the cherries, granulated sugar, and lemon juice.
  • Cook over medium heat for about 5-7 minutes, occasionally stirring until the cherries soften.
  • If a thicker filling is desired, mix cornstarch with water and stir it into the cherry mixture, continuing to cook for another 2-3 minutes until thickened.
  • Remove from heat and let it cool completely.

Make the Whipped Cream Topping

  • In a chilled bowl, beat the heavy cream with an electric mixer on medium speed.
  • Gradually add powdered sugar and vanilla extract, continuing to beat until soft peaks form.

Assemble the Cake

  • Take one of the cooled chocolate cakes and place it on a serving platter.
  • Spread a layer of the cherry filling over the top, followed by a layer of whipped cream.
  • Place the second cake layer on top and frost the entire cake with the remaining whipped cream.
  • Garnish with shaved chocolate and extra cherries for an irresistible finish.
  • Refrigerate the cake for at least 2 hours before serving.

Notes

For an extra burst of flavor, consider adding a splash of almond extract to the cherry filling. You can also substitute cherries with other fruits like raspberries or strawberries.
