  • 2+ pieces Dried chili peppers For a hint of heat

For the Whipped Feta

  • 8 ounces Creamy feta cheese Tangy and smooth
  • 8 ounces Greek yogurt Rich and creamy (roughly the same amount as the feta)
  • 1 tablespoon Honey For a touch of sweetness
  • 1 handful Fresh dill For garnishing
  • 1 handful Fresh parsley For garnishing
  • 1 handful Fresh chives For garnishing

Instructions
 

Preparation of Tomato Confit

  • Preheat your oven to 300 degrees Fahrenheit.
  • In a deep, oven-safe dish, arrange the cherry tomatoes evenly to cover the bottom.
  • Cut the head of garlic crosswise and add it to the dish along with the herbs and dried chili peppers.
  • Sprinkle salt generously over the top and pour olive oil over the tomatoes until mostly covered.
  • Bake for about 1.5 hours, allowing the tomatoes to transform into flavorful orbs.
  • Once done, let them cool to room temperature.

Preparation of Whipped Feta

  • In a food processor, add the block of feta, Greek yogurt, honey, and fresh herbs with a pinch of salt.
  • Blend until fluffy and creamy.
  • Refrigerate the whipped feta to chill while finishing the tomatoes.

Serving

  • Lay a generous spread of whipped feta on a plate.
  • Top with warm tomato confit and a drizzle of the oil.
  • Best enjoyed with artisan bread or as a dip.

Notes

Experiment with different herbs or add a splash of lemon juice to the whipped feta for a zesty twist. Substitute Greek yogurt with labneh for a creamier consistency. Roasting the garlic alongside the tomatoes enhances its sweetness.
