Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) to ensure even baking.
  • Line a 10 x 15 inch jelly roll pan with parchment paper.
  • Sift together flour, cocoa powder, baking powder, and salt in a bowl.
  • In another bowl, beat the eggs until thick and pale.
  • Gradually add granulated sugar and vanilla, beating until combined.
  • Gently fold in the dry ingredients and milk.
  • Pour the batter into the prepared pan and smooth it out evenly.

Baking

  • Bake for 10-12 minutes until the cake springs back when touched.
  • Immediately roll the cake in parchment paper or a clean kitchen towel while still warm.
  • Allow the cake to cool completely while rolled up.

Filling and Assembly

  • Whip the cream with powdered sugar and vanilla until stiff peaks form.
  • Once the cake has cooled, carefully unroll it and spread the whipped cream filling evenly.
  • Re-roll the cake carefully, ensuring the filling doesn’t spill out.
  • Chill in the refrigerator for at least 30 minutes before slicing.
  • Optional: Dust with cocoa powder or powdered sugar before serving.
