Instructions
 

Preparation

  • Cream together the softened butter, brown sugar, granulated sugar, and vanilla extract in a mixing bowl until smooth and fluffy.
  • Gradually mix in the all-purpose flour and salt until the dough comes together.
  • Fold in the mini chocolate chips evenly and set aside.
  • Line a 9-inch springform pan with parchment paper for easy removal.

Assembly

  • Spread half of the softened chocolate chip ice cream evenly in the bottom of the springform pan and freeze for 30 minutes.
  • Layer half of the softened vanilla ice cream on top of the chocolate layer, smooth it out, and freeze for another 30 minutes.
  • Crumble the cookie dough evenly over the vanilla ice cream, press gently, and freeze for another 30 minutes.
  • Spread the remaining chocolate chip ice cream followed by the last layer of vanilla ice cream, smooth the top, and freeze for at least 4 hours or overnight.

Topping Preparation

  • Whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  • Once the cake is fully frozen, carefully remove it from the springform pan and spread the whipped topping over the cake.
  • Garnish with mini chocolate chips and drizzle with chocolate syrup.
