Instructions
 

Preparation of macaron shells

  • Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper or silicone mats.
  • In a food processor, pulse together the powdered sugar and almond flour until finely combined. Sift the mixture to ensure a lump-free batter.
  • In a clean, dry bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add in the granulated sugar, continuing to beat until stiff peaks form.
  • Gently fold the almond flour mixture into the meringue in batches. Add in the cocoa powder and strawberry extract, folding until everything is combined.
  • Transfer the macaron batter into a piping bag fitted with a round tip and pipe small circles on the prepared baking sheets.
  • Allow the piped macarons to rest for about 30 minutes, or until the tops feel dry to the touch.
  • Bake the macarons for 15-18 minutes, then let them cool completely.

Preparation of strawberry ganache

  • In a saucepan, heat the heavy cream until it simmers. Pour it over the chopped white chocolate and let it sit for a minute to melt.
  • Stir until smooth, then incorporate the strawberry puree and optional pink food coloring.
  • Allow the ganache to cool to room temperature until it firms up for easier spreading.

Assembly

  • Spread or pipe a small amount of the strawberry ganache onto the flat side of one macaron shell, and sandwich it with another shell.
  • For best flavor, let the filled macarons rest in the fridge for 24 hours before serving.
