  • 3 pieces potatoes, peeled and cut into chunks Soak up the savory broth.
  • 1 piece onion, chopped Adds flavor to the dish.
  • 3 cloves garlic, minced Enhances flavors.
  • 2 cups beef broth Use bone broth for more richness if desired.
  • 2 tablespoons tomato paste Adds depth to the flavor.
  • 1 tablespoon Worcestershire sauce Aids in flavor complexity.
  • 1 teaspoon dried thyme Herb for flavoring.
  • 1 teaspoon dried rosemary Herb for flavoring.
  • 2 pieces bay leaves For aromatic complexity.
  • to taste salt and black pepper For seasoning.

Instructions
 

Preparation

  • Season the roast generously with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat. Sear the roast on all sides until it achieves a golden-brown crust.
  • Layer the carrots, potatoes, onion, and garlic at the bottom of the slow cooker.
  • Place the seared roast on top of the vegetables.

Cooking

  • In a bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, thyme, and rosemary. Pour over roast.
  • Add bay leaves to the pot.
  • Cover and cook on low for 8–9 hours or high for 4–5 hours until the roast is fork-tender.
  • Remove bay leaves before serving.

Notes

For extra flavor, consider adding a splash of balsamic vinegar or brown sugar to the broth. Using bone broth can enhance the richness. Sauté mushrooms and add during the last hour of cooking for gourmet touch.
