Preparation

  • In a large mixing bowl, combine 1 cup of cottage cheese, 2 cups of flour, 1 teaspoon of baking powder, and ½ teaspoon of salt.
  • Drizzle in 1 tablespoon of olive oil and add ¼ cup of warm water, mixing until a dough begins to form.
  • Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth.
  • Divide the dough into small portions (about the size of a golf ball) and roll each into flat circles, about ¼ inch thick.

Cooking

  • Heat a non-stick pan over medium heat and place one flatbread in the pan.
  • Cook for about 2-3 minutes on each side until golden brown.
  • Optionally, sprinkle fresh herbs on top before serving.

Notes

To enhance flavor, ensure dough consistency: add more flour if sticky or more water if dry. Over-kneading can lead to tough flatbread; only knead until smooth.
