Preparation

  • In a large bowl, combine cottage cheese, all-purpose flour, baking powder, salt, olive oil, egg, and optional garlic powder.
  • Mix until the ingredients form a soft, pliable dough, and add water if needed.
  • Transfer the dough to a floured surface and knead gently for a few minutes until smooth and elastic.
  • Divide the dough into small balls, each about the size of a golf ball.
  • Flatten each ball into discs, maintaining even thickness.

Cooking

  • Preheat a non-stick skillet over medium heat.
  • Cook the discs for about 2-3 minutes per side, or until golden brown and cooked through.
  • Serve warm with dips or as desired.

Notes

For variations, consider using whole wheat flour or adding herbs. Store leftover flatbread in an airtight container for 1-2 days, or freeze for longer storage.
