Ingredients
  

Sweet Potato Base

  • 2 large large sweet potatoes Opt for firm, unblemished sweet potatoes for the best texture.

Filling

  • 1 cup fresh or frozen cranberries
  • 1 juicy apple, diced
  • 2 tablespoons butter Can substitute with coconut oil for a vegan option.
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 2 tablespoons maple syrup Can adjust to taste.
  • to taste teaspoon salt

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Pierce the sweet potatoes with a fork to allow steam to escape.
  • Bake the sweet potatoes for 45-50 minutes until soft.

Filling Preparation

  • In a skillet, melt the butter over medium heat.
  • Add the diced apple, cranberries, nutmeg, cinnamon, and salt. Cook for 5-7 minutes until the apples soften and the cranberries burst.
  • Stir in the maple syrup and cook for an additional 2 minutes.

Assembly

  • Scoop out the sweet potato flesh and mix it with half of the cranberry-apple filling.
  • Spoon the mixture back into the potato skins and top with the remaining filling.
  • Bake for another 10-12 minutes until heated through.

Notes

For added crunch, consider topping with slivered almonds or chopped walnuts before the final bake. A dash of orange zest can add a citrusy twist.
