Preparation

  • In a large bowl, beat together softened butter and sugar until light and fluffy, about 3-4 minutes.
  • Add eggs one at a time, ensuring full incorporation before adding the next, then add vanilla extract.
  • Mix in fresh orange juice and orange zest, followed by alternating the dry mixture and buttermilk until just combined.
  • Gently fold in dried cranberries and white chocolate chips.
  • Divide the batter among cupcake liners, filling them about two-thirds full.

Baking

  • Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean.
  • Allow cupcakes to cool completely on a wire rack before frosting.

Frosting

  • Beat softened butter until smooth, then gradually add powdered sugar, melted white chocolate, heavy cream, and vanilla extract.
  • Beat until frosting is fluffy and billowy.
