  • 4 to 4.5 cups broccoli florets, fresh Vibrant and fresh
  • 4 to 4.5 cups cauliflower florets Tender and sweet

For the Sauce

  • 1/3 cup unsalted butter Divided for flavor and richness
  • 1/3 cup all-purpose flour Creating a creamy base
  • 2 cups whole milk For a smooth texture
  • 1 teaspoon garlic powder Adding aromatic depth
  • 3/4 teaspoon salt Or to taste
  • 1/2 teaspoon onion powder For a touch of sweetness
  • 1/2 teaspoon freshly ground black pepper To spark flavor
  • 1/4 teaspoon ground nutmeg Lending warmth and hint of sweetness
  • 6 ounces shredded mixed cheese Includes mozzarella, provolone, Parmesan, Asiago, cheddar
  • 2 to 3 tablespoons unseasoned panko bread crumbs For crunch

Garnish

  • 1 bunch chopped chives or green onion Optional for freshness and color

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Steam the broccoli and cauliflower florets for 6-8 minutes until they are tender yet still crisp.

Making the Sauce

  • In a saucepan over medium heat, melt 1/4 cup of butter.
  • Whisk in the all-purpose flour and cook for 1-2 minutes until it forms a light roux.
  • Gradually add the whole milk while whisking continuously to ensure a smooth sauce without lumps.
  • Continue mixing until the sauce thickens, then stir in garlic powder, salt, onion powder, black pepper, and nutmeg.
  • Remove from heat and stir in 1/2 cup of mixed cheese until melted.

Combining and Baking

  • Combine the creamy sauce with the steamed broccoli and cauliflower until well coated.
  • Transfer to a greased baking dish and sprinkle with the remaining cheese and panko bread crumbs.
  • Bake in the preheated oven for 35-40 minutes, or until bubbly and golden brown.

Serving

  • Garnish with chopped chives or green onions before serving.

Notes

For a twist, add red pepper flakes for spice or grated Parmesan on top before baking. For a creamier texture, substitute whole milk for half-and-half or sour cream. Feel free to incorporate leftover roasted vegetables.
